Mmmm… chocolate cake! No eggs, no butter, no milk. Completely delicious, and easy!

I found this recipe at a cabin I stayed at recently in Canada. Our hosts were vegetarian, and I did have a bit of milk and eggs, but we were pretty limited. On this particular night, I was out of butter, eggs and milk. I tried it out, and it was great. The whole family loved it!

MUD PIE CAKE:

Preheat oven to 350 F and grease a 9″ x 13″ pan (I just had a little bowl that would go in the oven, so I used that).

In a large bowl, mix together:

2 1/2 cups flour

2/3 cup cocoa

1/2 tsp. salt

2 tsp. baking soda

2 cups sugar

1/4 cup soy flour (this is for nutritional value. If you don’t have soy, just use regular flour. I actually used a mix of rye and white flour).

In a smaller bowl mix:

6 Tbs. oil

2 cups and 6 Tbs. water

1 tsp. vanilla

2 Tbs. vinegar

Mix the wet ingredients into the dry ingredients and bake 45 minutes.

I sprinkled mine with powdered sugar. Or you can ice or leave plain. Would be great with soy ice cream!
