Egg in the Hole or Peeping Eggs

If you’re looking for a breakfast that’s quick and easy, yet delicious and different, try egg in the hole.
Ingredients:
1 slice bread for each diner
1 egg for each diner
butter
1 cheese slice for each diner (optional)
Melt butter in pan over low heat. Meanwhile, use a glass or cookie cutter to cut out a hole in the bread slices. Traditionally this would be a circle, but feel free to use a heart, Christmas tree, or whatever makes sense. Keep your hole small, so that there is plenty of edge left on the bread.
Place the bread, along with the cut out piece, into the pan and toast. When browned well, flip and remove center cut piece. Crack an egg into the hole, and fry until brown and egg is done as you want. Top with cheese and cover to melt if desired. If you like sunny side up, you can melt a little extra butter and spoon this onto the egg until it’s cooked. If you want the yolk solid, you can (carefully!) flip the bread and fry for a minute on the opposite side.
Toast the other side of the cut out piece if desired, then top egg and serve hot.
