One-dish harvest stovetop recipe

This is one of those great recipes that I made up on the spur of the moment to use up ingredients I had on hand. Hope you like it. A great way to use up Thanksgiving leftovers. 1 medium cooking apple (use golden delicious if you have to. Or check your local farmer’s market for fine heritge cooking apples like Gravenstein or Belle de Boskoop.
1 cup boiled or baked winter squash, pumpkin, sweet potatoes, or a combination (leftovers are perfect)
1/2 cup chopped pork, chicken, or turkey
1/4 cup dried cranberries or currants
1/4 cup apple cider or juice
butter, salt and brown sugar to taste
Saute the apple, squash, and meat in the butter until slightly browned. Add cider and dried fruit, and simmer covered for 5 or 10 minutes, or until cooked through. Add brown sugar and/or salt if desired.Serve with stuffing or rolls,and salad for dinner or just as is for a filling but healthy lunch.
