Garnaches

Garnaches
This is one of the Belizean fast food snacks, found on every corner in every town, 2 or 3 “fu dollah”. The other snacks are salbutes and panades. Garnaches are the easiest to make.
2 or 3 store bought tostada shells for each person (these are flat corn tortillas, fried crisp)
Cooked beans (pinto or kidney would be best, but anything would work, even lentils)
Shredded cabbage
Shredded cheese
hot sauce to taste, especially Marie Sharp’s or homemade Belizean-style habanero sauce.
Mash the beans, and preferably fry them with a bit of oil or butter, garlic and onions.
Spread on the tostada shells, sprinkle on cabbage, and a bit of cheese (just a little bit of cheese!)
Top with hot sauce and enjoy.
These Garnaches are great. I grew up on these and still have them from time to time. We have them for dinner as well. Mom is a great cook.
