Gourmet Dill Biscuits

My mom used to make these with those pop-the-can refrigerated biscuits. Those things are nasty (ever taste a raw one and bite into the fake lard pellets? yuck), so I use homemade biscuits instead. The drop biscuit dough works great for this.
2 cups flour
1 Tbs. baking powder
1 tsp. salt
1/3 cup canola oil
2/3 cups milk
3/4 stick of butter
1/4 cup grated Parmesan cheese
2 Tbs. fresh or dried dill weed
1. Preheat the oven to 425F
2. Mix together flour, baking powder, and salt.
3. Stir together the canola oil and milk
4. Combine flour mixture and milk mixture, stirring until just combined and pulling away from the edge of the bowl (never stir biscuits longer than this, they’ll get tough)
5. Place in an ungreased cake pan or pie dish, putting them right next to each other
6. Melt the butter in a pan over low heat
7. Combine the butter with the Parmesan and dill
8. Pour or brush over the biscuits
9. Pop in the oven and bake for 10 minutes, or until baked through and golden brown
These are absolutely delectable and elegant; great for fancy dinners when you want a side dish to impress your guests.
