Hawaiian Chicken with pineapple and bell peppers

Hawaiian Chicken with pineapple and bell peppers

- 1/4 to 1/2 small bell pepper, sliced, for each diner
- 2 pineapple rings (or a similar amount of fresh pineapple), chopped into bite sized pieces, for each dinner
- 2 ounces chicken, ham, Polish sausage, firm tofu, or sliced beef for each dinner
- 1 tsp. soy sauce or tamari, or to taste
- 1 Tbs. ketchup, or to taste
- salt and pepper to taste
- Parmesan or cheddar cheese (just a sprinkle for each person, optional)
- rice

1. Saute the bell peppers and protein of your choice in a bit of olive oil or butter, and set aside.
2. Add the pineapple with juice. Add in some soy sauce and ketchup. Cook until it slightly thickens.
3. Add in your cheese, if using, taste, and season
4. Serve over warm rice with bread and/or salad
