Pani Puri Recipe by Manjula, Indian Vegetarian Cooking

Learn how to make Pani Puri, an Indian treat.
Makes about 60 puris.
Ingredients
Pani (Spicy Water):
1 cup mint leaves (Pudina)
2 to 4 green chilies (adjust to taste)
3 tablespoons tamarind paste (Imli)
3 tablespoons lemon juice
1 teaspoon black salt
1 teaspoon salt (adjust to taste)
1/4 teaspoon ginger powder
1/8 teaspoon asafetida (Hing)
1 tablespoon roasted cumin seed powder
1 tablespoon sugar (adjust to taste)
1/2 teaspoon black pepper
4 cups water (adjust to taste)
Puris:
1/4 cup All Purpose flour (Maida or Plain Flour)
3/4 cup fine Sooji (Semolina Flour)
1/2 cup water (as needed)

Manjula, you made the puri making look very easy and they turned out great looking. You did a great job of explaining too. I could feel the taste in my mouth of the pani puri which I miss so much having lived for over two decades in small town Canada. Thanks.

the best thing about your recipes is that you don’t use onion and garlic. I don’t eat and i was wondering how to make all these items without using onion and garlic. Thanks a lot. You are the best cook. [:)]

Hi,I have tried few of your recipes, it was very nice…but today I tried pani-puri, it was really really great. I liked both pani and puri preparation and it came out really excellent.Thanks and keep uploading videos with your latest creation.

use just whole wheat flour no sooji and keep the same method.

Thank you very much Manjula aunti ji, I tried this reciepe and it came out very good. I ate golguppe after 4 yrs and it is all because of you that i could taste them again. only thing I was thinking that golguppe prffed well but were not very crispe and looking at the color i was thinking if may be we can use wheat flour instead of maida as that color of golpuppe i remeber use to be little bit wheatish color. Pls suggest

Manjula ji I’ve never tried any of your recipes, but I know quite a bit of cooking and I can vouch that your recipes are just great.
Minimal ingredients and simple method are the hallmark of good cooking which you demonstrate, but over all what you really do well is elaborate just where things can go wrong. That makes your recipes stand out well above others.
You are doing the job of thousand mums by teaching young people the fine art of Indian Ccoking.
