Looking for simple, delicious green vegetable recipes

I really want make my own meals, that are healthy with green veggies, especially i tend to eat really bad junk food. The only meal i really know how to make is broccoli w/ cheese. Is there any meals, that are simple, doesn't really require so much ingredients and that they are fast and easy to make – about 20 minutes tops, yet they are still pretty good to swallow? And also there include healthy like green vegatables.

Especially for the summer, a really great green veggie recipe is the green smoothie. It’s incredibly easy! Plus quick, delicious, and very, very good for you.

Recipe for 3 people (use organic produce if possible, if not, wash well):

1 apple, washed
1/2 lemon, washed
2 cups cold water or leftover tea
1 banana
10 ice cubes (optional)
3 big handfuls of spinach (or other greens – if using bitter greens like kale or romaine, remove stems)
1 cup seasonal fruit per batch

Blend apple, lemon and water (cut apple into fourths, core if desired. Cut up the lemon but don’t peel). Add bananas (peeled) and ice and blend. Blend in spinach until all is mixed well. This should be a deep green color.

Taste and if it’s too “green” add more fruit. Don’t add sugar or yogurt, milk, etc. If too thin, add more banana.

As you make green smoothies, you want to make them sweet first to get used to them. Then as you adjust to the flavor, you can add more greens/less fruit, as greens are better nutrition and less sugar.

These are great for breakfast or a quick lunch. More filling than you would think, and wonderful in the summer when you don’t want to cook anyway.

As a side dish I take pretty much any vegetable ( green beans, sugar snap peas, snow peas, asparagus, brocoli, mushrooms, or a mixture of these) saute them with some garlic and ginger and then add soy sauce. Let the soy sauce reduce a little untill it's kinda syrupy. Serve the vegetable with the sauce.

    Ratatouille is great too. Saute onion, and garlic in olive oil. When the onion goes translucent, add chopped eggplant, zuchinni, tomato concasee (seedless, skinless, roughly chopped tomato), red and green bell pepper, and really any other vegetables that you want to put in there. Basil, oregano, thyme and parsley are good in there too, and salt and pepper of course.

  2. spaghetti bolognese. Just boil the pasta (10 minutes tops) and then brown the mince and add to the mince loads of spinach and chopped tomatos and then buy a good quality bolognese sauce (good ones are just like homemade and have no artificial additives) then you just simmer for two minutes. Drain the pasta and serve. Delicious,very cheap,quick and very healthy as for desert fruit with sugar free jelly is delicious

  3. Everytime i make rice a roni, or zatarains, I add a 1/2 bag of frozen spinach to it, and some sliced mushrooms ( a lot of times u can find them already sliced in the fresh produce section).
    Zuchinni is really easy to make just slice it as thick or thin as u like, put it in a warm pan with enough olive oil to coat the bottom, sprinkle some black pepper and garlic salt over the top and cover them , cook them on low and they will steam and come out perfect
    Get a bunch of tomatoes cut them into 4th's drizzle them with olive oil, sprinkle some minced fresh garlic and fresh ripped up basil salt and pepper, put them on a cookie sheet and roast them in the oven, when they're done you can put it into lil zip loc bags and take them out for whenever you're cooking fish, chicken, pasta or rice.

  4. WIKI WIKI CHICKEN SALAD
    2 c. cubed, cooked chicken (good for leftovers)
    1 c. pineapple chunks
    1 c. seedless grapes, halved
    1/2 c. slivered almonds, toasted (macadamia are good too)
    mayonnaise, salt & pepper – lettuce to serve it on
    Mix all ingredients with just enough mayonnaise to lightly coat and salt & pepper to taste. Serve on lettuce leaves. I like to garnish with orange slices….

    MARINATED VEGETABLE SALAD
    1 pkg. frozen broccoli, thawed
    1 pkg. frozen brussel sprouts, thawed
    1 jar marinated artichoke hearts
    1/2 head raw cauliflower
    4 green onions, chopped
    1 whole cucumber, peeled & sliced (I like hothouse)
    1 bell pepper, sliced
    1 small bottle Golden Caesar or Balsamic Vignarette dressing
    Mix all together and marinate 24 hours. Toss a few times during that time….

  5. 1. boiled shrimps, broccoli scalded in boiling hot water, melted butter poured over & a dash of pepper. sustitude broccoli with brussel sprouts, you've to cut into 1/2 & boil them.

    2. baby kale, scalded in boiling hot water, add oyster sauce & salad oil, throw in some thinly sliced fried garlic or shallots. add some fried bacon bits or you can add thin slices of beef that's cooked with running hot water from the tap & dipped in iced water to chill. use a spicy sauce instead of oyster sauce.

    3. papaya, mango & carrot cut into matchstick strips, add vinegar & olive oil, toss them to make a sweet & tangy salad. you can add thin strips of zuchini cucumber for color & thinly sliced onion for more punch.
