Osmosis in the kitchen – Fixing Wilted Greens

Oh no! You bought a head of lettuce last week, but forgot about it. Now you want to make a salad, but it’s all wilty and you’re thinking of throwing it out. But wait! You can “freshen it up” by immersing in cold water (at least 30 minutes). This time lapse video shows how it works. Science meets cooking, and cool video.
Dried and wrinkled salad/lettuce can be “refreshed” by immersing it in cold water. This is due to osmosis. The process is shown in a time lapse video where things are speeded up 720x.

I just normal tap water, but you can use distilled water if you like.

3 and a half hours to make my lettuce look fresh?

musik is great! but the problem is that because of osmosis the cells will take up too much water and will destroy the cell with a result that the salad will only look fresher but will taste old

Yeah, like it’s this reverse osmosis process or something that one can use to make milk fresh but I would honestly just whether get a new bottle from the store.
