Mom’s Potato Soup
This is my mom’s basic homemade potato soup. Plain, but really tasty, especially with Ritz crackers and Colby-jack or cheddar cheese. hehe. You can easily make it veg, just use oil and rice or soy milk, vegan cheese, etc.
1 Tbs. Butter (feel free to sub. margarine or oil)
Couple cloves of garlic, finely chopped
About half a medium onion, finely chopped
3-5 large potatoes, cubed
Water and/or chicken, beef or veggie stock
Milk or cream (soy or rice milk if you wish)
salt and pepper to taste
1. Saute the onion and garlic with the fat until they’re soft and smell good.
2. Add your liquid (not the milk yet), salt and pepper, and potatoes and bring to a simmer. If you want a soupier soup, use more liquid, for a creamier soup, use less.
3. Continue to simmer until the potatoes are soft.
4. Take out about half of the potatoes and mash them up with the milk, then re-add to the soup and reheat.
5. Serve with Ritz crackers and colby-jack cheese. It tastes even better the next day (and the next!)
